Adobo Chicken

  • 3 lbs chicken (I prefer thighs, but any cut will do)
  • 1 medium onion, sliced
  • 5 cloves garlic, crushed
  • 3/4 cup soy sauce (low sodium is fine)
  • 1/2 cup red wine vinegar
  • 2 TBS brown sugar
  • 10 peppercorns
  • 2 TBS brown sugar

Layer chicken in slow cooker.  Pour in remaining ingredients, stirring lightly to combine.  Cook on  low 6-8 hours.
