- 2.5 lbs chicken breasts or thighs
- 2 TBS oil
- 1/2 cup water
- 1 bell pepper, chopped
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes with green chiles
- 2 cans black beans (15.5 ounces each)
- 3 sweet potatoes, peeled and diced
- 1 TBS cumin
- 1 TBS chili powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 lime, juiced
- 1/4 cup cilantro, coarsely chopped
Heat oil in large skillet over medium heat. Cook chicken until evenly browned.
Place chicken in slow cooker, pour water over the top. Add spices, stir gently.
Top with sweet potato, onion, garlic, pepper, and tomatoes. Squirt lime juice over the top.
Cook on low for 4-6 hours.
